做(zuò )法(fǎ ):春笋切成片后加少许(xǔ )盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水(shuǐ )快(kuài )熬干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅(guō )盖焖(mèn )。 -
