做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏(yì )米。用清(qīng )水把陈皮(pí )泡软,拍裂一小块姜,热(rè )锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清(qīng )水,放入煎(jiān )煮(zhǔ )好的鲫鱼和其他材料,武火煮(zhǔ )沸,转中(zhōng )小火煲(bāo )一个(gè )半小时(shí ),下盐调(diào )味即可(kě )品尝。 -
